A spiced plum compote served with creamy vanilla ice cream made from frozen bananas.
Ingredients
- 4 fresh plums
- 1 tsp orange zest
- 4 tbsp juice of fresh orange
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1 tbsp coconut sugar
- 4 frozen bananas
Directions
- Cut the plums into quarters, removing the pips. Place the quarters and remaining ingredients into a saucepan over medium heat and cook for 10 mins until plums are soft and in a thick syrup.
- Let cool before serving with the vanilla ice cream.
- For the vanilla ice cream, blend the frozen bananas in a high speed blender/food processor with the vanilla perform until smooth.
- Tip: For easier blending, thinly slice the bananas before freezing and use a splash of water/plant milk to help blend if needed.
