We recently asked our favourite Irish Instagrammer @nourishingfir to create us the sexiest stack of protein pancakes the world has ever seen. It was a bold challenge for sure, but we knew without question that she was the girl for the job.
These Ultimate Cacao Protein Pancakes with Whipped Coconut Cream are made with the Madagascan Vanilla flavour PERFORM protein powder which lends a silky smooth base and subtle sweetness to the pancake mixture.
Best of all, you get all the amazing benefits of PERFORM hidden in your breakfast - including 25g of raw vegan plant protein, 6g of BCAA, 4 powerful superfoods and digestive enzymes!
We're delighted to welcome Fir to our blog to share the recipe, so that you can make these pancakes for yourself!
ULTIMATE COCAO PROTEIN PANCAKES WITH WHIPPED COCONUT CREAM
Serves 2 (or 1 very hungry) people
- 1/4 cup oat flour
- 1/4 cup almond flour
1/4 to 1/2 cup almond milk
1 scoop PERFORM Madagascan Vanilla Protein Powder
1 egg or 1 flax / chia egg
3 tbsp raw cacao powder
1 tbsp maple syrup (optional)
- 1 tbsp coconut oil, plus extra for frying
Whipped Coconut Cream
- Fresh Raspberries
- Banana Coins
- Almond Butter
1. Put all your ingredients in a food processor and blend until a smooth batter forms. The amount of milk you use will depend on how thick you want the batter to be. I suggest starting with a 1/4 cup then adding more little by little if needs be.
2. Heat a little coconut oil in a frying pan and then fry the pancakes for about one minute each side. They are ready to flip when bubbles appear on the surface. You will need to re-oil the pan for each batch. I got 8 medium sized pancakes from the above ingredients.
3. Serve with your favourite toppings. These went really well with raspberries, whipped coconut cream, banana coins and almond butter!
