Ultimate Cacao Protein Pancakes with Whipped Coconut Cream
Serves 2 (or 1 very hungry) people
1/4 cup oat flour
1/4 cup almond flour
1/4 to 1/2 cup almond milk
1 scoop PERFORM Madagascan Vanilla Protein Powder
1 egg or 1 flax / chia egg
3 tbsp raw cacao powder
1 tbsp maple syrup (optional)
1 tbsp coconut oil, plus extra for frying
1) Put all your ingredients in a food processor and blend until a smooth batter forms. The amount of milk you use will depend on how thick you want the batter to be. I suggest starting with a 1/4 cup then adding more little by little if needs be.
2) Heat a little coconut oil in a frying pan and then fry the pancakes for about one minute each side. They are ready to flip when bubbles appear on the surface. You will need to re-oil the pan for each batch. I got 8 medium sized pancakes from the above ingredients.
3) Serve with your favourite toppings. These went really well with raspberries, whipped coconut cream, banana coins and almond butter!
