Easy and healthy vegan parfait with salted maca caramel overnight oats, topped with banana and date caramel.
Ingredients
- 1 ripe banana
- 1 cup of dairy free milk
- 1/2 cup of gluten-free oats
- 1 tbsp of chia seeds

1 serving of Vivo Life Perform Plant Protein (Salted Maca Caramel)
- 3 medjool dates
- 1 tbsp of almond butter
- Splash of almond milk
- Coconut yoghurt
- Optional toppings: banana coins, cacao nibs, almond butter, cinnamon
Directions
- Combine 1 ripe banana and 1 cup of dairy free milk in a blender and blend until smooth
- Pour into a jar combined with half a cup of oats, 1 tbsp of chia seeds and a scoop of PERFORM: Salted Maca Caramel and mix well
- Leave it in the fridge overnight to thicken up
- Make your date caramel by blending three medjool dates with 1 tbsp of almond butter and a tiny splash of almond milk
- Transfer to the fridge ready for the next morning
- When ready to serve, transfer your oat mixture to a jar and layer it up with spoonfuls of date caramel and coconut yoghurt, along with toppings of your choice
- Finish with a sprinkle of cinnamon and enjoy!
