These Raw Salted Caramel Cashew Cream Pie Bites are a no-bake vegan treat combining a cashew and coconut base with a rich caramel filling and a creamy cashew topping, making them a high-protein, indulgent dessert.
Ingredients
- 2 cups raw cashew nuts
- 1 cup desiccated coconut
- 2 tsp extra virgin coconut oil
- 2 tsp coconut nectar
- 1/2 cup cashews, soaked for 8 hours or overnight
- 1 cup pitted medjool dates
- 1 cup full fat coconut milk

1 serving Vivo Life Perform Plant Protein (Salted Maca Caramel)
- Pinch Himalayan salt
- Pinch of vanilla powder / Splash of vanilla extract
- 1/2 cup cashews, soaked for 8 hours or overnight
- 3 large medjool dates, pitted
Directions
- 1. Line an 8 x 12cm container with baking parchment.
- 2. Process all of the base ingredients in a food processor until they come together in a ball. Press this into the container and transfer to the fridge to chill.
- 3. Meanwhile, make the caramel filling by blending all ingredients in a high powered blender until smooth. Spread this mixture over the base then transfer to the freezer to set.
- 4. Once set, cut into slices with a hot knife. Make your cashew cream by blending the remaining ingredients, then piping a little of the mixture on top of each slice. Serve and enjoy!
