Red pesto is the lesser known tomato based cousin of regular green pesto. This recipe is just for the pesto, so that you can use it however you want. It's a simple and quick recipe, and is perfect for impressing a dinner guest.
This pesto is ideal used in a pasta with a selection of your favourite seasonal vegetables. If you prefer a thicker sauce, you can reduce the amount of water used!
4 sun dried tomatoes
2 large tomatoes roughly chopped
10g nutritional yeast
1-2 tsp white miso (optional)
Juice of half a lemon
Big pinch of salt
30g Vivo Life unflavoured Vegan Protein
Big handful of basil leaves with a few saved for garnishing
Combine all the ingredients except the Vegan Protein, almonds and basil in a blender. Give a quick blend so everything is combined and smooth.
Add the Vegan Protein and blend until smooth. Now add the almonds and basil and blend until you get the desired consistency, adding more water if it is too thick. Personally we like little bits of almonds in the sauce but you can have it smooth if you wish. Taste to season and finish with a twist of black pepper.
Serve over hot pasta, vegetables, a pizza base or whatever you choose!
