A rich and flavorful vegan sauce made with sun-dried tomatoes, almonds, and Vivo Life unflavoured Vegan Protein. Perfect for pasta, vegetables, or pizza.

Ingredients

4 sun dried tomatoes
2 large tomatoes roughly chopped
Garlic clove
10g nutritional yeast
1-2 tsp white miso (optional)
130ml water
Juice of half a lemon
Big pinch of salt
30g Vivo Life Vegan Protein (unflavoured)
40g almonds
Big handful of basil leaves with a few saved for garnishing

Directions

Combine all the ingredients except the Vegan Protein, almonds and basil in a blender. Give a quick blend so everything is combined and smooth.
Add the Vegan Protein and blend until smooth. Now add the almonds and basil and blend until you get the desired consistency, adding more water if it is too thick.
Personally we like little bits of almonds in the sauce but you can have it smooth if you wish. Taste to season and finish with a twist of black pepper.
Serve over hot pasta, vegetables, a pizza base or whatever you choose!
