As summer moves into autumn, the world blesses us with figs. There are few fruits which taste as amazing straight off the tree than a ripe fig. This may be an easy snack or dessert to prepare, but don't be fooled! It has all the flavor of the most elegant desserts.
Ingredients
- 100-150ml plant-based yoghurt (I use vanilla)
- 10g chia seeds
- Small pinch of cinnamon
- 1 ripe fig cut into quarters
- Pinch of coconut sugar (optional)
- Agave syrup to finish
Directions
Combine the yoghurt with the chia seeds, cinnamon and Vivo Life Protein, adding a splash of plant-based milk if the mixture is too thick. Place the mixture in a fridge while you prepare the figs. Baking
Heat up your oven to 180??c. Place the figs on a lined baking tray with a little sprinkle of coconut sugar. Place the tray in the oven and cook until the sugar is starting to caramelize, about 10 minutes. Once caramelized, remove from the oven. Serving
- When ready to serve, take the yoghurt mixture out of the fridge and spoon into a glass. Top with the roasted figs and a little drizzle of agave syrup.
