1 portion soba noodles
1 portion of extra firm tofu
1/4 red bell pepper
1 tsp ginger, minced
1 tbsp lime juice
1 tbsp soy sauce
1 tsp rice vinegar
1 tbsp agave syrup
1 tsp sriracha
1. Cook the soba noodles according to packaging, once cooked drain and rinse with cold water.
2. Grate the carrot, cut the cucumber and bell pepper into strips and cube the tofu. Then combine the dressing ingredients in a small bowl.
3. Add all the components to a bowl, pour over the dressing and mix.
4. Top with sesame seeds, coriander and spring onions if desired before serving.
