Chocolate Berry Ice Cream Cookie Sandwiches

In completely unplanned (but totally awesome) product development news: our Acai and Blueberry flavour of PERFORM makes the best berry ice cream we've ever tasted.

Not just 'good' for a protein ice cream. Good as in, if Häagen-Dazs released a vegan range and led with an Acai & Blueberry flavour, you'd spend £6 on a tub and eat the entire thing on the bus journey home with a plastic fork.

As romantic as that story sounds, there's a much easier (and cheaper) way to get your fix: with a handful of frozen fruit and a scoop of Acai & Blueberry PERFORM.

Not only will your home made berry ice cream trump any of the store bought stuff for taste, it will also provide you with a hefty serving of plant protein, BCAAs and powerful antioxidants. Win!

And, if you're feeling really adventurous, you could do what we did and sandwich it between a tower of freshly made cookies...

Like most of our recipes, these vegan Chocolate Berry Ice Cream Cookie Sandwiches are completely raw (meaning no baking is required). This is the best way to enjoy our vegan protein powders to ensure your body is absorbing all of the amazing nutrients they contain.

So whip up a batch for breakfast, as a post workout snack, or any other time of day you need a fix of high protein deliciousness!

 

Chocolate Berry Ice Cream Cookie Sandwiches (serves 4)

Chocolate Berry Ice Cream Sandwich Cookies

INGREDIENTS

 

For the cookies

  • 1 cup oats
  • 1/2 cup cashews
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • 2 tbsp cacao powder
  • 3/4 cup dates
  • Dash of vanilla extract

For the ice cream


For the chocolate sauce

  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp cacao powder

 

METHOD

1) To make the vegan cookies, add the cashews and oats into a food processor and blend for a few seconds to break these down slightly. Next, add in the dates, cacao, coconut oil, maple syrup and vanilla and blend again until everything is well combined and you’re left with a sticky, dough like mixture.

2) Take a little of the mix and mould into a small cookie shape. Repeat this with all of the dough and place these the freezer for 2 hours.

3) To make the ice cream, pop the frozen banana, berries and protein powder into a blender and add a dash of almond milk to help everything blend. Blitz these to create a really smooth, thick and creamy texture.

4) Meanwhile, mix together melted coconut oil, cacao and maple syrup and set this aside ready to decorate the cookies.

5) Now you’re ready to assemble everything. Scoop out some of the ice cream with an ice cream scoop and place this onto one of the cookies. Sandwich another on top and drizzle in the chocolate mix. Repeat and pop them back into the freezer for 30 mins to set or eat right away.
