Delicious vegan ice cream sandwiches with chocolate cookies and berry ice cream, perfect for a healthy and refreshing dessert.
Ingredients
- 1 cup oats (gluten free)
- 1/2 cup cashews
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 2 tbsp cacao powder
- 3/4 cup dates
- Dash of vanilla extract
- 1 frozen banana
- 1 cup frozen raspberries

- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 2 tbsp cacao powder

Directions
- 1. To make the vegan cookies, add the cashews and oats into a food processor and blend for a few seconds to break these down slightly. Next, add in the dates, cacao, coconut oil, maple syrup and vanilla and blend again until everything is well combined and you're left with a sticky, dough-like mixture.
- 2. Take a little of the mix and mould into a small cookie shape. Repeat this with all of the dough and place these in the freezer for 2 hours.
- 3. To make the ice cream, pop the frozen banana, berries and protein powder into a blender and add a dash of almond milk to help everything blend. Blitz these to create a really smooth, thick and creamy texture.
- 4. Meanwhile, mix together melted coconut oil, cacao and maple syrup and set this aside ready to decorate the cookies.
- 5. Now you're ready to assemble everything. Scoop out some of the ice cream with an ice cream scoop and place this onto one of the cookies. Sandwich another on top and drizzle in the chocolate mix. Repeat and pop them back into the freezer for 30 mins to set or eat right away.
