Until recently I had no idea that custard powder was vegan friendly and I had been itching to make a crumble! With autumn being the crumble season I just had to make one for this book. If you are not a fan of custard you can use your favourite plant-based yoghurt instead. Now, the only question you need to ask yourself is do you have this for breakfast, dessert or as a snack?
Ingredients
- 3-5 apples - cut into bite size chunks
- 250g blackberries or mixed berries
- 1 tbsp Maple syrup
- Pinch of cinnamon and nutmeg
- 525g store bought vegan custard, custard powder or plant-based yoghurt
- Granola
Directions
- Preheat your oven to 180??c. In an oven proof dish, combine the apple, maple syrup, cinnamon and nutmeg. Cover the dish with foil and cook for about 25 minutes before adding the berries. Re-cover and place the fruit back in the oven until the apples are soft and tender. You can now store it in the fridge or make the crumble immediately. If using pre-prepared custard, add the Vivo Life Protein to about 150g of the custard and whisk to make a paste. Add the remaining custard and whisk until smooth, adding a little water if necessary. If using custard powder, combine it with the Vivo Life Protein then prepare the custard as on the package, adding a bit more liquid if necessary. If using yoghurt, add the Vivo Life Protein to 150-200g of the yoghurt to make a smooth paste before adding the rest of the yoghurt, adding any plant-based milk if required. You can serve this hot or cold. If serving hot, simply warm up the fruit mixture and custard separately before serving. When ready to serve, spoon a layer of custard at the bottom of your serving glasses, followed by apple and blackberry mix, repeating until all the mixture has been used. Top with your favourite granola.
