2 cups butternut squash, chopped
1 white potato, peeled
200g macaroni pasta
1/3 cup nutritional yeast
Juice of 1/2 a lemon
1 tbsp Ritual Unflavoured
1 tsp garlic powder
1/2 tsp onion powder
Salt, to taste
Black pepper, to taste
METHOD1. Boil or steam the potato and squash until cooked.
2. Cook the pasta for required time and save 1/2 cup of pasta water before draining the pasta and leaving it the saucepan.
3. Once the potato and squash are cooked, add them into a high speed blender with the rest of the ingredients and pasta water, blend until completely smooth.
4. Bring together the sauce with the pasta in the saucepan and mix together. If needed, heat further before serving.
